Oh, shades of things to come. The 'boyz' got their Football gear today in a VERY long and DRAWN OUT process that almost made me burn the Mexican Lasagna . See how I snuck (is that a word?? sneaked...whatever) that recipe in here?? lol. Now that I have let me say that I have NEVER seen kids eat a "new" food like they ate this, I only have half a pan left and considering the size of the pan, apparently they either LOVED it or they are getting ready for a famine. Let me give you a couple of tips that aren't in the recipe (1) this is a BIG as in HUGE casserole, get out the turkey roaster or plan on making several famliy sized lasagnas the first hint should be that you use 4 cups of uncooked rice, cook it up add some sutff and that is just ONE layer. (2) unless you know a secret I don't Enchilda Sauce is dang near impossible to find in Canada, I tried 3 stores until I finaly found 1 jar at Safeway. (3) I NEVER put beans in anything, Gary won't eat them so mine was/is black bean free. (4) don't subsitute regular Salsa for the Salsa Verde, trust me the Verde adds a really cool flavor that regular salsa doesn't have.
That's all for now, I'm sure there will be plenty more recipes and pictures of Football over the coming weeks. Did I mention that Football is Monday thru Thursday nights practice and Saturday games...why do coaches hate me??

Dude, how could you even THINK that regular salsa and salsa verde would be similar? Have you SEEN them? *shakes head*
We don't have alot of ethnic food up here? I knew the difference but I wanted to point it out to the rest of us clueless Canadians=)
