I make pancakes every morning for breakfast. I don't do this out of great love and affection for my children or from worry about them having a hot breakfast. The sad truth is that I am CHEAP and when you are feeding between 4 and 8 every morning for breakfast cereal is expensive. I am also NOT A MORNING PERSON, this cannot be over emphasised, I hate mornings....alot, so getting up and measuring everything is sometimes just beyond me (I make pancakes from scratch , no store bought mixes here, again with the cheap thing) trust me when I say that pancakes without baking powder or sugar are not a happy thing. So I am happy to announce that I have found a wonderfully simple recipe for homemade pancake mix that saves my brain form math and measuring in the morning and I will now share it with you=)
Pancake Mix
12 cups flour
4 cups instant dry powdered milk
3/4 cup granulated sugar
3/4 cup baking powder
2 T. salt
Mix altogether very well and store in airtight container. Then when you want to make pancakes all you have to do is take:
(for 6-8 pancakes)
1 1/2 cups pancake mix
1 egg (beaten)
1 cup water
2 T oil
Mix until combined ( it is better to leave a few little lumps, don't over mix and your pancakes will be fluffier) Cook on hot griddle.
I personally made this this morning only I used 4 1/2 cups of mix 3 eggs etc... and they turned out great and it made enough for breakfast for 8 kids and after school snack for a couple of them too=) Enjoy!

I think I'm going to throw together a SMALL batch of these for myself, so when Brogan randomly asks for them, or I REFUSE to make french toast, I'll have it.
